A STUNNING COFFEE FROM SUPER INNOVATIVE PRODUCER, NORMA IRIS FIALLOS, OWNER OF SAN RAFAEL WHICH IS NESTLED WITHIN A SHADEY PINE FOREST. THIS LOCATION GREATLY ACIDIFIES THE SOIL, GIVING THE COFFEE A REALLY UNIQUE CUP PROFILE.

NORMA IS A WONDERFUL FORWARD THINKING LADY,  AND AT 88 YEARS YOUNG, IS ALWAYS EAGER TO TRY NEW THINGS AND HAS A VERY GOOD CONTROL ON HER PROCESS.

NORMA WANTED TO BE A DOCTOR BUT DUE TO THE WAR AND RELIGIOUS REASONS, HER PARENTS WOULD NOT ALLOW HER TO STUDY MEDICINE.  INSTEAD SHE STUDIED NURSING SPECIALISING IN OBSTETRIC DOING SOCIAL SERVICE IN THE U.S. AND PUERTO RICO. SHE CAME BACK TO HONDURAS WITH HER HUSBAND, TWIN DAUGHTERS AND 2 SONS.

HER DAD, A PHARMACIST AND HER MUM, A STRONG WOMAN WHO LED THE HOUSEHOLD, DECIDED TO START A FARM WITH DIFFERENT CROPS AND CATTLE,  BECOMING THE FIRST PEOPLE TO INTRODUCE COFFEE FARMING TO THE REGION.

WHEN NORMAS DAD PASSED AWAY, NORMAS HUSBAND WENT TO HELP WORK AT THE FAMILY FARM.  WITH NORMA STAYING IN THE CAPITAL WITH HER KIDS SO THAT THEY COULD GO TO GOOD SCHOOLS.  LATER, HER SON DONALDO, WHO STUDIED AGRONOMY, JOINED THE FARM INTRODUCING NEW VARIETIES AND ORGANIC FARMING METHODS - MEANWHILE NORMA MANAGED THE FARM REMOTELY FROM THE CAPITAL AND LATER JOINED HER SON AFTER HER HUSBAND PASSED AWAY. THE FARM NOW HAS UP TO 60 EMPLOYEES AND THEIR FARM IS CONSIDERED AS A COFFEE SCHOOL TEACHING THE NEXT GENERATION OF COFFEE PRODUCERS TO SET UP THEIR OWN FARMS. INNOVATE DON’T IMMITATE.
